A warm soup, the best remedy to combat the onset of cold winter days
The temperatures drop, the blankets rise. We are in the middle of autumn and winter is just around the corner! To warm up, there’s nothing better than a tasty and healthy hot soup with seasonal vegetables. We have already proposed some light winter recipes, this time we show you some recipes that can be made exclusively in the microwave!
Bean and escarole soup with croutons
Preparation time: 20 minutes
Ingredients for 2 people:
- 1 clove of garlic
- 1⁄2 chilli
- 250 g of cleaned escarole
- 250 g of boiled cannellini beans (+ cooking water)
- 1⁄2 teaspoon of dry rosemary
- 50 g of stale wholemeal bread
- 3 tablespoons of extra virgin olive oil
- whole salt to taste
Steps:
1. Peel the garlic. Remove the seeds from the chili pepper and slice it. Put 2 tablespoons of oil, garlic and chilli in a large container suitable for the microwave and cook without a lid with the Micro function for 1 minute at maximum power.
2. Finely slice the escarole, pour it into the container and mix. Cook with the Combi function (Co2) for 3 minutes without a lid.
3. Add the beans to the escaroles and cover 2/3 with the cooking water, add salt and mix. Close with a lid and cook with the Micro function at maximum power for 8 minutes.
4. Cut the bread into cubes. Put the bread, dried rosemary, 1 tablespoon of oil in a bowl and mix. Arrange the bread cubes on the Crisp Pan and place it on the wire rack in the microwave. Cook with the grill function for 2 minutes, turn the croutons and continue for another 2 minutes with the grill.
5. Divide the soup into plates, add the croutons and complete with a drizzle of oil.
Black cabbage and vegetable soup with rosemary
Preparation time: 30 minutes
Ingredients for 2 people:
- 1 clove of garlic
- 1 sprig of rosemary
- 60 g of peeled carrot
- 60 g of celery, peeled
- 60 g of peeled leeks
- 80 g of peeled and peeled potatoes
- 250 g of peeled black cabbage
- 2 tablespoons of extra virgin olive oil
- whole coarse salt to taste
- ground pepper to taste
Steps:
1. Peel the garlic. Put the oil, garlic and rosemary in a large container suitable for the microwave and cook without a lid with the Micro function for 1 minute at maximum power.
2. Cut carrots, celery and leeks into large pieces, put them in a mixer and chop until a homogeneous mixture is obtained. Cut the potatoes into cubes. Finely slice the black cabbage lengthwise.
3. Add the mince to the container with garlic and oil and mix. Cook with the Combi function (Co2) for 4 minutes without a lid.
4. Add the potatoes, black cabbage, salt, pepper, cover 2/3 with water and mix.
5. Cover with a lid, insert the container in the centre of the turntable and activate the pre-set recipe Vegetables → Vegetable soup (500 g). Stir at the beep. Press Start to continue cooking. When cooked, let it rest for 3-4 minutes.
6. Divide the soup into bowls and top with a drizzle of oil.
Paprika azuki soup
Preparation time: 15 minutes
Ingredients for 2 people:
- 250 g of cooked azuki beans (+ cooking water)
- 80 g peeled carrots
- 80 g celery, peeled
- 80 g peeled onions
- 2 teaspoons of sweet paprika powder
- 1 sprig of fresh parsley
- 2 tablespoons of extra virgin olive oil
- whole salt to taste
Steps:
1. Chop carrots, celery and onions into large chunks. Put everything in a mixer and chop until you get a fine mixture.
2. Put the oil, chopped vegetables, paprika in a large container suitable for microwave and mix. Place in the oven and cook without lid with the Micro function for 5 minutes at maximum power.
3. Add the azuki beans, salt, cover 2/3 with the bean cooking water and close with a lid. Continue cooking with the Micro function for 7 minutes at maximum power.
4. Finely chop the parsley. Divide the soup into plates, add the parsley and top with a drizzle of oil.
