There’s nothing better than a tasty home-made meal with deliciously spicy flavours. But what recipes should you choose to avoid disappointment? If you have run out of ideas or want to try something new and healthy, here are three baked dishes chosen for you by our kitchen experts, which can also be viewed step-by-step in the Hoover Wizard app cookbook.
Whole-grain parboiled rice with spicy sauce
Preparation time: 30 minutes
Ingredients: Whole-grain parboiled rice, spring onion, cumin, tomato pulp, coriander, salt, olive oil
Cook the brown parboiled rice in plenty of boiling salted water. Drain when al dente and cool under running cold water. Season with oil and stir. Chop the spring onion and brown it with a drizzle of olive oil, the crushed cumin and the chili pepper. Add the tomato pulp and coriander. Cook the sauce and finally season with salt.
Spicy baked fish
Preparation time: 35 minutes
Ingredients: Fish (dentex or mullet), banana leaves (optional), lime, garlic cloves, sliced baby onions, Thai red curry paste, coconut milk.
Clean the fish, removing the scales, and make cuts on each side with a sharp knife. Place each fish on a layer of banana leaves or aluminium foil. Cut the lime into thin slices and insert them in the cuts made on each fish, together with the garlic flakes. Spread the onions on the fish. Grate the rind and squeeze the juice of the remaining half lime and mix it with the curry paste and coconut milk. Spread spoonfuls of the spicy mixture over the fish. Lay the banana leaves or aluminium over the fish and completely wrap it. Tie it up tightly with twine and bake in the oven at an average temperature for about 15-20 minutes. Serve with lime slices. Banana leaves are a perfect natural wrapping for barbecued food, but if you cannot find them, you can use tin foil. Even a whole big fish can be cooked this way. As a general rule, cook the whole fish for about 10 minutes for every 2.5 cm of thickness.
Bouyourrdì
Preparation time: 40 minutes
Ingredients: Feta, tomatoes, fresh chili, green peppers
Heat the oven to 200 °C. Drain the feta from its liquid. Wash the tomatoes and peppers, then cut them into thin slices. Dice the feta and clean the chili. Pour a drizzle of olive oil into a saucepan and make a first layer with half the tomatoes. Add a little salt. Pour half the diced feta and half the peppers over the tomatoes. Sprinkle with a little chili. Repeat the process by making another layer of tomatoes, feta, peppers and chili. Add another drizzle of olive oil and put the saucepan in the oven. Cook for about 30 minutes until the feta has melted.
